Candy Cane Bark

Q: How should I package white chocolate candy cane bark in tin for xmas gift?I do not cook much and I want to buy tin.. but should I lay wax paper down then the bark on top or is their something better.. does it need to be wrapped or put in a plastic bag or anything??


A: I line the tin with saran wrap. Just put it over the bark loosely so it isn't airtight.

Melt the semi sweet chocolate in a microwave or on low heat in a saucepan. Remove from heat. Add the oreo cookies and stir very gently. Turn out onto a foil lined cookie sheet and spread out with a knife-try to spread out the cookies so they aren't in a clump but instead a single layer. Make sure to keep it thin so it's easy to break when cooled.

Kendon Candies is a home-grown business whose best known product is the ...

You could call Tom Kennedy the captain of "The Good Ship Lollipop," although the actual name of his business is Kendon Candies.

Located in a small industrial area on the edge of Willow Glen, Kendon Candies is where some 12,000 lollipops are made by hand each weekday.

Kennedy, 85, is the patriarch of the family-owned firm. He's been in the candy business since he was a young boy and got an after-school job sweeping floors at Henry Naas' Candy Store on Park Avenue near Hester Street in the Rose Garden area.

Inside Kendon Candies is an amazing operation where sugar is heated from 60 to 310 degrees in 20 seconds and comes oozing out onto a heated table.

There the candymaker deftly divides it into lumps before transferring it to a smaller heated table where coloring and flavoring are added.

"Hard candy is made of just two ingredients: sugar and corn syrup," Kennedy says.

"The only difference is the flavor."
